Double chocolate muffins

Vegan By Eden's dreamy chocolate muffins made with Califia's Vanilla Oat Milk is perfect for the whole family. 'It's the creamy texture and naturally sweet taste that's so delicious, these didn't even last a day in my house!' We don't blame you Eden! 

INGREDIENTS: 

  • 1/2 cup Califia Farms Vanilla Oat Milk
  • 1 tsp apple cider vinegar 
  • 1/3 cup coconut oil (or alternatively vegetable oil)
  • 1 cup plain baking flour
  • 1 tsp baking powder
  • 1/4 cup cocoa powder
  • 3/4 cups raw sugar
  • 1/4 cup dark dairy free choc chips 

METHOD:
1️) Preheat the oven to 180°C.
2️) In a large bowl, combine Califia's Vanilla Oat Milk with coconut oil, apple cider and vinegar.
3️) Add the flour, baking powder, cocoa powder and sugar. Mix together to form a thick batter but do not over mix, only until the flour is no longer visible.
4️)  Spoon mixture evenly into a greased or lined muffin pan. Sprinkle the choc chips on top of each muffin and bake for 25 mins or until a skewer comes out clean. Let them rest in the muffin pan for 15 mins before transferring to a cooling rack.
