Oat muffins

Need a winning lunch box filler or grab-and-go snack? We've got you covered with these incredible muffins from Clarissa, The Nourished Chef. They are super quick and easy to whip up and even quicker to eat! :)  
Makes 12 muffins

  • 1 cup oat flour
  • ⅓ all purpose flour
  • 2 tbsp flaxseed meal
  • ¼ tsp salt
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ½ tsp ground nutmeg
  • ¾ cup applesauce/purée
  • ⅔ cup Califia Farms Vanilla Oat Milk
  • ⅓ cup maple syrup
  • 2 tsp apple cider vinegar
  • ½ cup apples (diced) 


  • ½ cup coconut sugar
  • 2 tbsp Califia Farms Vanilla Oat Milk
  • 4 tbsp vegan butter
  • ¼ tsp sea salt

1) Preheat oven to 175C. Line a 12 cup muffin tray, set aside. In a large bowl, whisk the dry ingredients until no lumps appear.
2) In a second bowl, whisk the applesauce, oat milk, and maple syrup until combined. Combine wet mixture to the dry batter. Gently stir in the apple cider vinegar. If to thick add more oat milk. If too thin, add more oat flour. Fold in the apple.
3) Spoon the batter into the lined muffin tray. Top the muffins with oats and coconut sugar (optional). Place into the oven for 18-25 minutes or until the centre comes out clean with a toothpick.
4) Meanwhile, in a saucepan, whisk all the sauce ingredients together over a medium boil.
5) Once the mixture has thickened and is bubbling slightly, remove from the heat. Allow to cool in the fridge until ready to serve. Drizzle and enjoy!
