Walnut lemon loaf

Your new go-to morning or afternoon tea! You will LOVE this zesty lemon bread with delicious walnuts. Made with wholemeal flower and the goodness from one whole lemon! Thanks for the recipe Candy from Nourish and Flourish. 

INGREDIENTS:
  • 1.5 cups wholewheat flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 2/3 cup Califia Farms Vanilla Oat Milk
  • 1 lemon (juice + zest) ~1/4 cup
  • 3 tbsp olive oil
  • Toppings: 1/3 cup walnuts, roughly chopped
METHOD: 
1) Preheat oven to 200C. Mix dry ingredients in a mixing bowl.
2) Mix wet ingredients in another bowl and add to the dry mixture and mix well.
3) Transfer batter to a lined loaf pan, top with walnuts and bake for 40-45 mins, or until a skewer comes out clean. 
4) Remove from the oven and let cool in the pan for 10 minutes, before transferring to a cooling rack to cool completely.
