Oat muffins
Need a winning lunch box filler or grab-and-go snack? We've got you covered with these incredible muffins from Clarissa, The Nourished Chef. They are super quick and easy to whip up and even quicker to eat! :)

Ingredients

1 cup oat flour
⅓ all purpose flour
2 tbsp flaxseed meal
¼ tsp salt
1½ tsp baking powder
1½ tsp baking soda
2 tsp ground cinnamon
¼ tsp ground ginger
½ tsp ground nutmeg
¾ cup applesauce/purée
⅔ cup Califia Farms Vanilla Oat Milk
⅓ cup maple syrup
2 tsp apple cider vinegar
½ cup apples (diced) 

CARAMEL SAUCE
½ cup coconut sugar
2 tbsp Califia Farms Vanilla Oat Milk
4 tbsp vegan butter
¼ tsp sea salt

Directions

1) Preheat oven to 175C

Line a 12 cup muffin tray, set aside

In a large bowl, whisk the dry ingredients until no lumps appear

2) In a second bowl, whisk the applesauce, oat milk, and maple syrup until combined

Combine wet mixture to the dry batter

Gently stir in the apple cider vinegar

If to thick add more oat milk

If too thin, add more oat flour

Fold in the apple

3) Spoon the batter into the lined muffin tray

Top the muffins with oats and coconut sugar (optional)

Place into the oven for 18-25 minutes or until the centre comes out clean with a toothpick

4) Meanwhile, in a saucepan, whisk all the sauce ingredients together over a medium boil

5) Once the mixture has thickened and is bubbling slightly, remove from the heat

Allow to cool in the fridge until ready to serve
